if you want to watch the opening video you can change the extension of this file:
C:\Program Files (x86)\SquareEnix\FINAL FANTASY XIV\data\8A\D0\00\00.DAT
from ".DAT" to ".wmv".

Ironically enough, when I watched it in the game it often suffered from screen tearing (probably due to the fact I was using a crappy monitor at the time) - played in this way though there was no tearing whatsever.
I wonder though, if the other FMVs (like the Circle facing down Gaius in Mor Dhona) can also be viewable in this way (probably not, but it's a nice idea).
Doesn't have anything to do with the monitor, just the fact you probably watched it in fullscreen and FFXIV 1.0 didn't have vsync enabled. When playing in windowed mode and windows aero on, vsync is automatically on, and most players nowadays don't switch to exclusive fullscreen mode, so no tearing.
I think some of them can be, namely those with subtitles (so yes, the Gaius one), but your character will obviously be missing. The rest is dynamically generated from ingame footage. No, you can't really load the other cutscenes the same way you can the opening FMV.
The main difference is the opening FMV is pre-rendered, that is, it is an actual movie file already drawn and compressed. This is why the characters, like our derplander and his party, have very realistic looking models and textures. If your computer tried to draw that the same way it does the other in-game cutscenes, your PC would either choke and die, or spend the next 30 days loading each frame xD
The ingame cutscenes, like the Gaius battle in Mor Dhona for example, is drawn/rendered the moment the game tells your computer to run it. It also has to call your current character data, and the model for your path companion, which it cannot do unless it contacts the server for that information.

It's true for the most cutscenes like I said, but I'm pretty sure I stumbled upon the Gaius one in the data files, I just cba to find it atm. Pre-rendered sequences have, like you said, one distinct feature: high details, but also effects not in the game. The spell Papalymo casts is one example, the explosion at the end another. Right, the actions Papalymo does does not mesh with how the game works, but nevertheless the sound effects and glowy things are actual assets in the game (the game has thousands of small glows and other things that can easily be combined)
Same thing with the fire on the tree: it wouldn't take much to tell the game to extend, stretch, or duplicate a "fire" asset already available to convincingly display a burning tree.
It COULD also be that these effects were created for the cutscenes as well, but still, the main point you're missing is that these effects, like our character models, are lower quality enough so our PCs can load them in real time with little to no hiccups.
The same can't be said for the opening FMV. The "assets" for those movies are on an SE harddrive somewhere, tucked away from the public eye, so that plebs like me won't take them and make silly animation with them (like derplander >_>)

I've just searched through all the files and I couldn't find the Gaius one, so I guess I was mistaken. The opening is the only pre-rendered cutscene in the 1.0 client.

Ah, that explains it - I completely forgot about vsync, that does make perfect sense (and yes I was playing FFXIV 1.0 in full screen mode - but under XP though).
