General question on how to spend my time.

Mostly looking for your own opinions about this. I only have two level 50 jobs at them moment and of course look to level all of them to 50. Highest level craft is only 30 so I of course want to level those as well. The question I'm looking to have answered here is:
Should I just focus on leveling all of those above everything else or at some point should I try to find a LS to dungeon runs with. Since all the steps for the relic aren't out yet and the DL gear drop rates are just stupid low, I hear its pointless to waste time in those places.

Honestly how you should spend your time is entirely up to you! It wouldn't hurt to find a linkshell you can do events with, get experience in dungeons etc. You'll learn nice strategies you can apply to other areas of the game which is pretty cool. Yes, drop rates really are balls for things like Darklight, but it's still fun trying! (kinda. . . I tell myself that so I will keep going haha)

As for crafting, crafting I've always found to be very profitable, especially if you level a DoL job alongside them to farm all your mats. CUL is always handy if you use food a lot (who doesn't love cake on demand?), though you might try levelling something like ARM/CRP so you can keep yourself stocked with cobalt arrows.

If you go absolutely nuts on crafting you may burn yourself out, so try to just take it steady, do dungeons and crafting, keep your activities varied otherwise your head may implode.

I would focus on trying to do anything that isn't going to be around in 2.0

Namely: Getting all your GC quests completed, make sure you get a goobue mount, try for some primal weapons, get all your aetheryte camps and gates, do the main scenario quests.

You will always be able to level up, but there are certain things that won't be around much longer (I think yoshi is preparing a list for 1.23) and I would make sure you do all of that before it's gone.
