Sure, why not? In yet another case of 'please go and actually play other games to see what the competitors bring to the table' I'd point to the personality system in the Elder Scrolls Online and the toy system in World of Warcraft. Both of which - combined with actual combat classes themed around the undead allow the player to create an undead looking character.
It's always interesting, though, because many of the same individuals fiercely against stuff that plays into the actual 'fantasy game' side of things will dismiss it readily but then you'll see them in another thread defending the modern style glamour that the game embraces with increasing frequency.
It'd be beneficial for role-players, if nothing else. I've run some campaigns in World of Warcraft fighting against a necromancer and some friends had a lot of fun creating undead looking characters to take on the role of his minions.

This actually had me thinking of WoW's Death Knights and I would like to at least have an icy-glow eye cosmetic option.
I would also add ESO's skins which allows you to give different body textures into your character as well. ESO has a pretty solid character customization system all things considered. I would definitely want FFXIV to take notes from them.Sure, why not? Won't happen - especially as there is a cultural aversion to depiction of corpses in Asian media (the Chinese and Korean versions had to have all undead enemies's appearence changed for instance), so this simply would not happen (story wise it simply wouldn't make sense anyway).
