That's still related to your maximum capability. The higher your maximum capability, the harder the content (or vice versa), the higher minimum item level required to clear the content.
There's literally thousands of things you can do. There's a ton of lore to look into, there's like a billion quests in each expansion, there's relic weapons, Eureka, and other content like that. There's beating every dungeon at every difficulty level and I guess if you don't like savage / ultimate for whatever reason (I don't like dungeons but like savage / ultimate) so we all have our different tastes, then you can always play the glam / housing game. Collecting all the emotes / mounts / orchestreons and other things that are collector's pieces is another thing you can do. PvP which I doubt is your thing is something else you can get in. There's Heaven on High / PotD, New Game+, beast tribes, crafting and gathering especially with the new 5.21 content with ishgard restoration and ocean fishing.
I don't know many people who have completed everything. I'm approaching year 2 and have completed almost everything I listed except I haven't finished all Stormblood and Shadowbirnger quests yet and am missing a few new mounts, minions and orchestreons. There's so much to do. I know you are mentioning main-class progression but maybe you should consider not just playing a fighting class since that is only one part of the game? You should get into savage content, it isn't that hard and you don't need to use discord. It'll help for pugging but you don't have to.

Since, minimum item level sync also means that materia are not factored in, since it will only be utilized if you're wearing melded gear that is that minimum item level.
In addition, we see that Savage has different minimum item levels for its bosses (While your "Maximum capability" doesn't change, since you can get all the loot from all the bosses by being not minimum item level)
Finally, we have Ultimate, which is lower item level than E7S/E8S, but is the hardest content in the game. It also has specific item level sync which is lower than the maximum capability (475 vs maximum item level gear which is 500 with a 505 weapon)
Yeah, that's just the nature of vertical progression. I'm talking in general, not per content. When they make content, they factor in what you can do. Unless they made a mistake, they're not going to make content that you can't do, but also, they'll have a soft limit to what you can do based on the content (with some leeway for job adjustments). That's why you sometimes see nerfs to jobs when they try to balance jobs instead of just always buffing a weaker job.Err... No.

The problem is at some point you will have done that already. And then you get patches that are clearly not aimed at veteran players but newbie player to generate more new players to the game. If your time schedule doesn't allow savage or ultimate raiding then you don't really have much to do. Palace of the Dead and Baldesion Arsenal were really nice content timesinks for in between with no time pressure, the game needs stuff like that bad. Even mentioning PvP is bad atm, it took us 7 months for one season and now we don't know when the next one will be either. They made it every aspect of the game too easy and grindy, and the rest is ultimate then. What's in between? I also am playing other games sometimes, but I wish they wouldn't be so predictable with their content, which seems to get less too. Less dungeons, less potd, less pvp, later ultimates, crafting and gathering nerfed that everyone can be 80 in a day and nothing is worth something on the marketboard.
