reddit is a pc gamer thing, I have never even visited such a site as a console player.Personally I've seen more hype for CyberPunk 2077 than the Remake. Sure there is hype for both, but presently interest in CyberPunk seems stronger.
The FF7 remake reddit only has about 16K subscribers, whereas CyberPunk 2077's has 271K. Final Fantasy as a whole's reddit is only 177K.
I've been playing FF since the very first one on NES, and 7 is my 3rd favorite after 4 and 6. But that nostalgia isn't making me blind to present trends.
Again - not saying people aren't excited for FF7R, especially on a Final Fantasy discussion board - but Cyberpunk will probably outsell it.
I still don't think the release dates for either game are dependent on what the other is doing though.

Depends on the community really. The plain Monster Hunter subreddit has a following of 344k over there and that only made the jump to PC with World. You can even check years-old console exclusive titles like Bloodborne and see they have pretty substantial followings, 178k in this case. The general rule I've seen is this, if the game has more community driven aspects that encourage or require player to player interaction they tend to have a large reddit following. Pokemon alone is immense over on reddit due in part to the trade system, and it's far easier to just put up a request for a certain poke over on Reddit than it is to hunt through the forums on sites like Serebii.
All in all, your individual mileage might vary.

Amazon has had the remake available for pre-order since the early to mid 2000s. They finally gave me an account credit for then 20$ I put down on it, so some of us have been waiting longer than others. The game has been in development for 4 years, including planning and pre-production. Thats not an unreasonable time frame. The reason it seems like such a long time is because SE likes to announce projects way too early with the tagline "now in development". Are you getting FFXV vibes from animal crossing? Doom Eternal? Avengers? Games get delayed all the time, Red dead redemption 2 got delayed 6 months, FF7R is being delayed 1 month.
However that comment was not meant to be taken seriously, lol. I don't really care either way. I'll be ready when it gets here.
I find CDproject red to be abit overratted. And it's even worse as it's been comfirmed that they are chunching the whole time. To be fair tho, while I am a massive FF fan I'm not too hyped on remake. I will be buying it day one but if life has shown me many times.. it's better to wait and play it yourself before you let hype take over. If anything Sega will get my money first if they become smart and remake Sonic Adventure tho. I'd play that over FF7 remake anyday.
Tho question, is it that much of an issue if they came out within the same week? Why can't you just buy them all? Thats what I do. But I also have no kids or anything so I do alot of things when I want.

Witcher 1 was "meh". Witcher 2 was decent but I couldn't bother finishing it. Witcher 3 people have gone crazy over. I enjoyed it but by the time I got to the last DLC I just stopped playing and haven't picked it up since.I find CDproject red to be abit overratted. I enjoyed the story aspects but not too much a fan of open-world time wasting. At this point many people have idealized the studio as though they do no wrong.
I'm not personally interested in CyberPunk 2077 any more than I am in any big release that I don't plan on buying. I'm curious about the remake but am going to wait for reviews. If it's more a tailored story focused remake I will pick it up. If it turns out to be Midgar turned into an open-world with a lot of time-waster activities like ?s in Ubi games I'll pass.
