Man = Hyur, Roe, Lala, Miqote, Elezen and Au Ra, its just used as a shorthand for the "races of Eorzea"
Thats... kinda odd.
You could consider the different races simply as different species of human.
FF XIV isn't the only setting I've seen to use the word "man" to refer to all sentient races in general.
Well, there's not exactly a good neutral in-universe term for all the playable races. There is a term for all the races that can talk (Spoken), but it covers everything from the playable races to Tonberries, to Sirens, to beastmen, to the dragons themselves. It also sounds really weird when used in a sentence.
Also, if you're in HW talking about this, then it's probably the dragons who are referring to man (as in races of man/mankind). Just know that dragons are very weird in this game and their language is also really weird (it's at least partially telepathic for starters). They also are very, very long lived and have a hard time dealing with how fast time goes for individual people (to the point that their language has no past tense). So they tend to have a very, very broad view of things.
Typically anything that you can put "man" on as a descriptive word counts as "man" or "mankind"

Races in FFXIV are most like just a super extreme version of real life racial differences within a single species and less like say Tolkien or WoW where elves are make of tree bark and lalafells are evolved pugs or whatever.
Basically yeah, all the playable races apparently had the same common ancestor. In evolutionary terms it would likely be the case where the different races were isolated in different places at some point in history and as a result evolved different traits as a result of their environment. One real world example of this is wolves (bichon frise : saint bernard :: lalafell : roegadyn). Another example is broccoli, cabbage, kale, brussels sprouts, etc., all of which are the same species (B. oleracea).

Fun fact, until the thirteenth-century 'man' was not a gendered word. It referred to all humans. At least in Old English. Woman came from wifman (which also evolved into the word wife). To refer to a person of the male gender the word was werman (like werewolf)
So yeah, having 'man' refer to all the player races/ non-beast men tribes, is a stylistic choice that is sound, though hearing it can sometimes make you go 'wait, what?' because when you hear 'man' you think 'humans' or 'men.'
It's kinda like the choice where they keep referring to the planet Hydaelyn as a 'star' instead of a planet. Grammatically correct choices, albeit out dated, but to the modern audience it sounds off.
Also, at least three of the player races are capable of interbreeding. We have a canon Hyur-Elezen hybrid in Hilda (Male Elezen, Female Hyur). And the Ruby Tide subquests mentions an Hyur-Au Ra coupling in the past (Male Hyur, Female Au Ra). So one could make an argument they are the same species. But it's also possible to make an argument they are not, so your mileage will vary with that.
