if we could learn in advance what they are fixing, it would alleviate some frustration.

Oh noes!!!! SE are fixing broken things how dare they.
They contribute nothing to the community or to the game, since SE can't just leave the servers with whatever problems they're fixing, and so that's a good thing. I'm sure they're deviously plotting to annoy you with the maintenance, though. Mwahahaha and all that.
Personally, it doesn't bother me, I'd rather them fix things than not. People complain when they take to long to fix things and then people complain when they move quickly to fix things. Either way you look at it, one side or the other of fence complains. Again, I'm on the side I'd rather them fix critical issues as soon as they come up with a tested solution rather than waiting on a full release of minor bug fixes. One thing I'd like to see them avoid is band-aid fixes, anyone in the software development field knows what this means...a band-aid fix in the long run will cause you so much more maintenance effort to fix down the road.
As for the deleting of posts, haven't really noticed, then again it could considered spam perhaps if multiple topics about the same thing are posted over and over again? It could also be users are reporting posts as spam. /shrug Who knows, their forum posting guidelines seem very vague at times.
Being that this is a new product (it is 1.0 tossed out and started over with a completely new engine), this is not much of a surprise.
The first month maintenance was mostly get the servers built up to fix the over capacity issue they had (due to more people playing than expected).
The 2nd month maintenance was to combat RMT (which they have done well on) and fix a few bugs including mobs that would get stuck or freeze (1 of which that took a few attempts). They also did another expand of capacity.
They did say they would monitor things and increase capacity again as necessary. Now we are well into the paying period and they are still slightly over capacity. From at least people I know and others it seems like each time they increase capacity to cover the extra influx of users, more users come in to fill that capacity.
This maintenance says in the notice what it is for "in order to address high server stress"
This means they are adding more capacity.
They did even head our request and not put most of the maintenance during prime-time (hence it is usually 11/12 to 1/2) when they up capacity that does take longer hence the longer maintenance.
If things keep grown after the 2.1 update there will probably be another upgrade to capcity.
If the capacity issues and the RMT issues stay under control then there won't be nearly as many maintenance runs.
All MMORPG I ever played had a set day every week in which the game would be brought down for the weekly maintenance. It's not different with FFXIV.
