It's simple really, I just like a good dose of chaos (whilst still playing the actual "game" of ballista, not just random killing). Generally speaking most of the newer stuff is "cooler" and more fun to use, so even though the balance isn't quite as good (A simple "<=AF3 and no relic/mythic/empy rule keeps things from getting too messy) I find it more fun (though I agree it's not as good for a highly competitive game).
Also, a small part of it is the jobs I like to play seem to perform better in uncapped than in 60 due to a lack of certain abilities that are (in my opinion) vital to those jobs (e.g. PUP: Role Reversal, Merit BPs on SMN (because they ignore shadows, which at least when I played ballista more heavily, were critical because everyone and their mother would sub NIN)). This has changed somewhat recently however. The helixes, a part of what makes sch unique (even if they're a bit lackluster in PvP), are now useable in 60 cap when they weren't before. PUP got Deus-ex Automata, which meant that people gang-raping your automaton wouldn't cripple you for a third of the match. SMN is still a problem though. pretty much the only reason I would take it to 60cap would be for astral flow.
