In my experience it seems AMII is now pretty worthless, especially in Abyssea, and acts as a back up nuke when Tier Vs are down and the player doesn't want to use a Tier IV. Otherwise they're slow and MP inefficient. So if you want to unlock all of the AMs or build two to max, that's completely up to you.
The majority of Black Mages tend to max out ice and thunder potency as these are our two most powerful (Darkness and Light) spells. But if you want to be a professional at another element like Fire or Wind, that's always an option too.
As for Atmas I always use Baying Moon, Beyond, and Minikin Monstrosity. I don't have Ultima.
